To make this Tofu Scramble Vegan Breakfast Bowl Recipe, simply make a tofu scramble with House Foods Organic Firm Tofu, roasted sweet potatoes, and quinoa the night before. If you had told me years ago that I would rather eat a tofu scramble than one made with eggs, I would have looked at you like nuts. Why on earth would I want to eat all that soy for breakfast?! Ick.

Well friends, times have changed. I don’t see words like I used to. I don’t always eat it at every meal and sometimes not every day, but definitely more than I did before. All of her books are filled with fun recipes and tips to help you become an expert in that style of cooking.

I have had many tofu scrambles out to eat but I have never tried to make my own at home so I thought their recipe would be the perfect place to start. It requires a few simple ingredients and takes less than 10 minutes to whip up. My breakfast.

The trick to getting the egg-like texture is to use soft tofu and crush it into large pieces about 1/4 to 1/2 inch in size and then let it dry on a baking sheet lined with a dish towel.

Actually I couldn’t find soft tofu so I had to use firm but it still turned out amazing. Red onion, red pepper, basil and salt add just the right amount of flavor while turmeric gives it a light yellow color that resembles scrambled eggs.

Directions: Cover the pan with a paper towel (or tea towel) and then crumble the tofu into 1/4- to 1/2-inch pieces on top. Let it drain for 20 minutes, then gently press with a paper towel. In a large skillet, heat oil on medium heat. Add bell pepper and garlic and cook until softened, about 5 minutes. Stir the crumbled tofu with salt, turmeric, and pepper. Cook until the tofu is hot, about 3-5 minutes. Remove from heat, add fresh basil and serve warm.

*If you can’t find soft tofu, firm tofu (not super firm) will also work, just be careful not to crumble it too finely.

1. Add oil to a large, non-stick skillet and add diced potatoes. Cook on medium heat, stirring occasionally until cooked and nicely browned (use a lid to help cook the potatoes faster).

2. Once the potatoes are cooked, add bell peppers, onions, and cherry tomatoes, and cook for 5-7 minutes, or until the vegetables are soft.

3. At this point, add cumin powder, sriracha, salt, and pepper. Take the tofu in your hand and crumble right into the skillet. Cook, stir, and break pieces of tofu, for a few minutes.

4. Now add the spinach and ¼ cup of water. Cook until the spinach has wilted and the water has almost evaporated.

Because this tofu breakfast recipe makes quite a large portion, there is a high possibility that you are going to have some leftovers. All you have to do is add it to the fridge in an airtight container and store it for the next meal. If you can make it to breakfast – great! If not, you can reheat for lunch or dinner.
