Crust 1-1/2 cups (150g) wholemeal bread, spooned, seasoned 1/2 teaspoon salt 3/4 cup (80g) granulated sugar 1-1/2 sticks (150g) unsalted butter, cold and chopped to 1/2 -inch cubes 1/4 cup cold water 3 – 4 apples 2 tablespoons brown sugar, or to taste 1 teaspoon vanilla extract 1 teaspoon cinnamon, or to taste 2 tablespoons unsalted butter, melted 1/8 teaspoon salt 1 tablespoon apricot jelly, or optional for glass

1. Line a baking sheet or tray with parchment paper. In your food processor, combine the flour, salt, and sugar. Add the cold butter and pulse on high speed until the butter thickens, about 5 seconds. Sprinkle the ice water over the mixture and pulse until moistened and very crumbly, about 5 seconds. You can shoot up and down until you get the right texture.

6. If you want to make a glaze: In a small bowl, mix the apricot jam with 1-1/2 teaspoons water. Using a pastry brush, coat the apples with the mixture.
