I make this recipe for breakfast about every other week, usually on the weekend. This is one of my family’s favorite breakfasts (another big hit is this breakfast sandwich). So obviously I wanted to find a way to make this a pretty quick breakfast.
I achieve this by using a relatively thin steak – ½ inch thick. I quickly grill them on my indoor grill and fry the eggs in a non-stick pan. If you don’t have a double contact grill, you can use a grill pan. You can also just fry the meat in a pan, let it rest, and then while it’s resting you can cook eggs in the same pan.
Steak And Eggs Over Easy, Breakfast With A Side Of Fried
You’ll only need a few simple ingredients to whip up a delicious steak and egg breakfast. The exact measurements are on the recipe card below. Here’s an overview of what you’ll need:
Chuck Eye Steak: Very nicely marbled, cheaper than ribeye and almost as good. So when it’s available, I go for it. But other cuts can work, including jogging and New York stripes.
Kosher salt and black pepper: If you are using fine salt, you can reduce the amount used. A teaspoon of kosher salt weighs less than a teaspoon of regular salt.
Garnish: I like to garnish this dish with red pepper flakes and some fresh chopped parsley. You can also use dried parsley. Since they are mostly used for garnish, you can just leave them out if you don’t have them on hand.
Steak And Egg Scramble
While it’s not as easy as popping a bowl of cereal, it’s not a complicated breakfast. Detailed instructions are provided in the recipe card below. Here are the basic steps:
Cook the steak. Start by seasoning and searing the steak. In general, you should grill it for about 2 minutes per side for medium-rare, or 3 minutes total for double-contact grilling. If you’re using a New York strip like I do in the video below, you’ll also need to prepare the fat strips.
Fry the eggs. While the meat is resting, quickly fry the eggs in butter or avocado oil. I love the metal biscuit cutter for making round eggs.
Even though we’re using a thin steak here, it’s still a good idea to cover it and let it sit for a few minutes after cooking. You can cook the eggs while it’s resting, and that’s a great way to ensure it stays nice and juicy.

Any relatively thin cut of beef will work here. But when I find a chuck eye at the store, I stock up. This is such a beautiful piece of marble. It’s almost as nice as a ribeye, but much cheaper.
Other options include Sirfil, which is a bit tough but very flavorful; fillet, not so aromatic, but tender – but these are usually very thick cuts, so less suitable here; and the New York strip.
You can cook them in the same pan, but not at the same time because they take different cooking times.
Therefore, instead of grilling the steak, you can grill it in a pan, let it rest covered, and while it rests, you can cook an egg.
