Spice Cake reminds me of the flavor of gingerbread with the texture of a banana cake. Like gingerbread, it has a rich flavor profile brought by cinnamon, ginger, nutmeg, allspice and cloves.

All of this contributes to a unique dough that is also moist and dense! Also, pecans and raisins are added for crunch and chew.

What I love about it is that you can make a sheet cake from this recipe, top it with a layer of cream cheese frosting, and it’s ready! Nothing fancy is required and yet it is absolutely delightful!

But, of course, you can layer it and decorate it all over with frosting, just like in this recipe.

This is a nice dessert to serve at afternoon tea parties or a casual gathering. It’s not as sweet as other desserts, so it’s something new for the palate that your guests are sure to love.

It is a traditional cake full of spices, usually with autumnal flavors. It is said to have been around since the 19th century and is still considered a family favorite.

The recipe is super versatile as you can add or leave some out if you like. If you want it to be more kid friendly, then you can reduce the spices, but if you want a stronger flavor, feel free to add it.

Yes! It’s even tastier the next day and can be kept at room temperature for up to two days. loosely covered with foil or a wrap. You can even make the topping or layers separately in advance, then assemble later when they’re ready to serve.

Spice Cake With Cream Cheese Frosting

I know it’s too much of a claim to say that my spice cake recipe is the best, but it’s too good not to be. Each cake layer is so moist and full of flavor. And because it’s baked with oil instead of butter, this cake stays moist for days after baking.

But the cream cheese frosting is the real star of the show. Made with brown butter, this frosting has a slightly dry and warm flavor that pairs perfectly with the many spices in this cake. Trust me, once you make this cake, you’ll never want another spice cake without it.

Most spice cake recipes include your traditional spices. It is a blend of cinnamon, nutmeg, ginger and cloves. These are all your classic spices that are perfect for fall and winter baking. Some may also add cardamom, all spice, or even pumpkin pie spice.

For my recipe, I went with a combination of traditional and unique spice. With the addition of cardamom, it adds an extra note of flavor that is unexpected but blends perfectly with the rest of the spices.

Vegan Spice Cake (paleo Too!)

Another flavor added to spice cake recipes is apple. It’s very common to include applesauce because it not only adds moisture, but works so well with the spices.

Cake batter is very easy to make, but here are some tips to keep in mind to make sure your spice cake turns out just right:

Once the cakes are baked, let them cool COMPLETELY before assembling. If they are still a little warm, the frosting will melt onto the cake and make the layers slip and slide right off.

I could dive right into that bowl of cream cheese ice cream. The taste is very good!

Maple Spice Cake With Maple Frosting

To make this type of frosting, you must first brown the butter. I have a blog post on how this works, so I recommend you check it out if you’ve never browned butter before.

But to keep it short and sweet, just melt the butter in a saucepan over medium heat. Continue mixing until melted, in bubbles and sprays, in foam. You’ll know it’s almost ready when it reaches the foaming stage and the butter goes quiet.

Pour the butter into a shallow glass dish (scraping up the brown bits on the bottom of the pan) and refrigerate. By the time the cakes are baked and cooled, the brown butter should be the perfect consistency.

This consistency should be opaque and firm, but not too hard. You should be able to easily dig a knife into it without applying too much pressure (like the picture above). If it is still too soft or wet, continue to chill. If it’s too firm, let it sit at room temperature until it softens.

Apple Spice Cake Recipe

Next, add the butter to the cream cheese mixture and mix until smooth. The next steps in this process are very simple, but if you find that the frosting is too thin, it could be because the cream cheese and/or butter was a little too soft to begin with. If this is the case, refrigerate the buttercream for about 30 minutes to thicken before adding to the cake.

Once the cakes have cooled, start flattening the tops. I use a cake pan to make this process much easier. They should be puffed in the center, but not too high so there isn’t a lot of waste. Or, you can use the cake scraps to crumble on top as a decoration.

Once flattened, you have the option of cutting each cake in half to create 4 thin layers. I prefer this because it gives you a better frosting to cake ratio for each slice. If you prefer only two thick cake layers, you can leave the layers as they are.

I don’t know what I like more about this cake, the frosting or the candied nuts on top…mostly for a side snack. They take this cake over the top, but it’s such a simple extra step. You can use any nuts you like, but my favorites for this spice cake are pecans and/or walnuts.

Pumpkin Spice Cake

I have a separate post on how to make homemade glazed walnuts. I recommend cutting this recipe in half, splitting the egg white in half as best you can. After that, spread the nuts with cinnamon sugar, roast and they are ready.

CAKE TYPES – You can also make (3) 6″ cake layers or (2) 9″ cake layers. Just be sure to keep an eye on the cooking times. They take about 30-35 minutes to bake in larger or multiple pans. Although I haven’t tested it, this batter should make the right amount for a 9×13″ pan. Bake at 350F for 40-45 minutes or until a toothpick inserted in the center comes out clean. Then, only make half frosting recipe to spread on top.

Chai Spice Cake With Cream Cheese Frosting

SPICES – Cardamom is not a spice found in everyone’s kitchen. If you don’t have it on hand, you can leave it out and add 1/4 teaspoon extra cinnamon and ginger to the recipe, or substitute pumpkin pie spice.
