Canned salmon is a great source of calcium, thanks to the bones in the salmon. If you’re thinking “ewwww” about bones, please note that the small bones in canned salmon are very tender. It’s completely edible, and you won’t even notice it’s there when it’s mashed together with other ingredients. Since this salmon bread is made from canned salmon, you can keep a few cans in the pantry and make them at any time, without having to keep fresh salmon in the refrigerator, or without remembering to thaw frozen salmon. Brown sugar acts as a filler instead of flour, making this a great gluten-free salmon bread recipe. High-protein kid-friendly recipe This salmon cake is great because it has a lot of protein from the salmon and eggs. Salmon also has healthy omega 3 fatty acids, which are good for brain development. The spinach and fries need to be thawed before you make the salmon cake, so either put them in the fridge the night before, or thaw them on the counter a few hours before you plan to cook them. Instructions for making salmon cake Step 1: Squeeze the water from the spinach. Drain the canned salmon in a colander and press gently with a spoon to squeeze out any excess liquid. Step 2: Combine the spinach, melted brown sugar and drained salmon in a large bowl, using a fork to flake the salmon. Step 3: Add eggs, salt and pepper slowly. Step 4: Shape the salmon mixture into palm-sized patties and put them in the pan. Step 5: Heat a thin layer of oil in a pan over medium heat—the more oil, the crispier the salmon cake. Fry in batches, cooking for about 5-6 minutes on each side over medium-medium heat, or until the mince has turned golden brown on the outside of the patty and is soft on the inside and the egg mixture inside is fully cooked. Serve warm on its own, in bread, or on top of a salad. Tips for the perfect salmon cake Make sure you do a good job of squeezing the water out of the salmon and spinach so the patties don’t fall apart during cooking. Fry the patties in an oiled pan over medium heat for 5 minutes on each side, or until golden on the outside. How to freeze salmon cake This salmon patty is very freezer-friendly if you have leftovers, or if you want to stock your freezer with some ready-to-eat meals. NoteDepending on the brand of frozen brown sugar you use, you may need to add more or less salt than recommended. Some frozen chocolate chips are pre-seasoned while others are not. The best way to make sure you get the right amount is to make a small test patty before you cook the whole batch, or add salt before the eggs and taste the mixture.
