What’s your take on appetizers? Meaning, can you eat it as your meal and be satisfied? I’m that person who always orders an appetizer when we go out to eat. There’s something about that little morsel of deliciousness to dazzle the taste buds before the main course. However, I’m finding that I’ll order a few appetizers and skip the main meal altogether.

I’m all about variety when it comes to food. They are small portions and you can try a bunch of different things. I think that’s one of the reasons I loved going to buffets (well, let me clarify that statement… I love going to good buffets! I’ve been to some sketchy ones where I wouldn’t even try the water in my glass).

For me, these Baked Salami Cups are such a great appetizer that you can easily turn into a meal. Crunchy, cheesy, delicious and all around delicious!

As you can see there are only a few ingredients and there is an optional (bagel toast). Later in the post, I’ll talk about substitutions and making them keto-friendly

Now all you need here is a mini muffin tin. However, if you don’t have one and just have a large standard size muffin tin, don’t worry. Just triple the recipe (just double the jelly though). You just need to make sure the meat covers the muffin well and the cheese is about halfway up.

Now you can stop there and serve these little bites as is, but here your girl wanted something more.

. It doesn’t add much flavor to it or make any difference in texture. These Fritos I used to love but then I love Fritos. However, the corn chip flavor overpowered the rest of the dish.

I then tried the bagel crisp. Guys this was so good! Like really, really good! It added a killer crunch, a hint of flavor (I used all bagel crisps) but still left the salami cup as the star.

You can definitely make this ahead of time (1-2 days) but don’t add the bagel crisps or basil until you’re ready to serve.

Place salami cups on a lined, rimmed baking sheet and place in a 350F oven for 5-7 minutes or until heated through and crisps again. Add basil and bagel toast before serving.

Freezing – I haven’t tried freezing these because we obviously eat them too quickly. I think they will freeze well. I thaw overnight in the fridge before reheating. If you try this, let me know!
