While the food didn’t particularly appeal to me, the one thing I remember instantly liking was the Bermuda Rum Cake.

The base cake is a one pound cake that has been soaked in a rich, buttery syrup. It was addictive, and I’ve wanted to make it at home ever since.

Imagine my surprise when most of the online recipes included either yellow cake mix and/or pudding mix! Even one of my most trusted go-to places for when I don’t know how to make a baked goods from scratch, King Arthur Flour, has a beer making boxed pudding mix. Huh. Maybe that’s just traditional?

I mean, I have a yellow cake recipe that includes a rant about why homemade cakes are better than boxed mix cakes. Why would I use one here?

It took a few tries to get this recipe right, but in the end it wasn’t difficult to get results that tasted like the Caribbean cake I had in Bermuda. I adapted one of my pound cake recipes, adding beer and some dark brown sugar, then I put in the syrup.

Typically, most of the alcohol added to baked goods is cooked away, leaving only the flavor. However, most of the alcohol is added to the beer cake after it comes out of the oven.

That said, I personally wouldn’t worry too much about it. There is not much alcohol for the slice. I’m not a doctor, so I recommend getting a second opinion if you’re concerned.

This recipe calls for large eggs. Using different sized eggs can affect the baked goods. Do not substitute a different size unless you have a kitchen scale to measure the same weight by volume (ounces or grams) to get the same total egg count.

For baked goods (as well as desserts like custard and ice cream), I always recommend using a kitchen scale to measure dough by weight instead of volume. A scale (ounces, grams, etc.) will always give an accurate measurement of dry goods; volume (cup) can create different results.

A cup of flour can weigh anywhere from 3 1/2 to 5 ounces. That can make a big difference in your recipe! If you still want to use cans, there is a good technique to ensure that you get the best possible results.

Bermuda Rum Cake With Pecans (from Scratch)

Today’s whiskey cake recipe is one that has been requested a lot in the last few months. I can’t even tell you how many beer cakes I went through to get the winning recipe, but it was a lot! But the results are completely worth it because this whiskey is incredibly delicious.

Unlike most cakes, this cake is made entirely from scratch without using a cake mix. Beer bread is also very soft, light, moist, and packed with beer. It’s also topped with a simple beer glaze that helps keep the cake moist and adds even more beer flavor.

If you prefer a lighter beer flavor, I’ve included options for how to make that. I’ve added a video tutorial to show you exactly how to make this homemade cake!

While this beer cake has several steps, it’s not overly complicated. Here is the exact recipe for making the cake:

Once the cake is baked, set it on a cooling rack to cool in the pan while you prepare the beer glaze. For the glaze, you’ll use unsalted butter, granulated sugar, rum, water, and pure vanilla extract.

You will start by melting the butter in a large saucepan. It helps to cut the butter into small tablespoon size pieces so it melts even faster. Next, you will stir in the sugar, alcohol, and water and bring it to a boil.

Once the mixture starts to boil, reduce the heat to a simmer and let it simmer for another 6-8 minutes. Then, remove from the heat and take out the vanilla extract. Remember that this is more like a syrup so it will be very thin, it will thicken a little as it cools but not too much.

Homemade Butter Rum Cake

Then, use a skewer or fork to poke holes in the cake and pour about a third of the glaze over it. I suggest letting it sit for about 10 minutes so the glaze can set.

Once ready, carefully turn the cake onto a cooling rack and use a skewer or fork to poke more holes in the top of the cake. Then, spoon the remaining glaze directly on top of the cake. I like to place a piece of foil or parchment paper under the cooling rack to catch any glaze and spoon back onto the cake.

Once the cake is completely cooled you can slice it up and enjoy it or store it in an airtight container until you are ready to serve it.

I love the taste of this cake with dark rum, Myer’s Dark Rum is my personal favourite! However, golden or spiced beer will work just as well in this cake as well.

The Best Homemade Rum Cake

No, this cake can be stored at room temperature. It can be stored in an airtight container at room temperature for 4 days.

For a lighter beer flavor, you can use golden beer. You can also use less beer glaze or simply cut the recipe for the glaze in half.

Freezing instructions: The cake will freeze well for three months. Refrigerate overnight and bring to room temperature before serving.

Cake Flour: I like to use Swansdown or Pillsbury Softasilk cake flour in this recipe. If you don’t have any, you can use my homemade cake flour substitute.
