Rhubarb Breakfast Recipe – Boys. This warm spring weather must be confusing me. I started running again last week. For the first time in years. I went for a walk in the evening and went jogging in 10 minutes. I forgot how good it feels to just let go and let go! Put on my snakes, put on a tune and just go. Like I said, spring weather makes you do crazy things.

Just like forget that you’re not necessarily out of shape, and no, you definitely can’t run an eight-minute mile. Not to mention the 15 minute mile. Let’s just say that the next day I was in severe pain and could barely walk. Embarrassing, I know.

But beyond the pain, one thing I’ve noticed is how hungry I’ve been since I started running again. After that first night, I started walking in the morning and I’m starving when I get back. My regular oatmeal wasn’t enough to fill me up, so I started thinking about how to change my routine.

Don’t they just scream spring? I mean strawberries and rhubarb? What better spring combo than that? I tell you none, none.

My mom makes big batches of rhubarb sauce every spring, so this compote is a play on that. Slices of strawberry and rhubarb lightly sautéed with ginger, honey and vanilla. Apple juice syrup is completely optional and can easily be substituted for honey or agave. I’ve been playing around with alternative sweeteners and I really like this one because it adds sweetness without just being sweet.

The result is a sweet and sour compote that is highly addictive. seriously. You’ll want to stash it somewhere deep in the fridge if you want a chance to make it for breakfast the next morning. This is so good!

And quinoa oatmeal doesn’t play either. Garnished with cinnamon, it is the perfect compliment to compote. Plus, it’s loaded with fiber and protein! How’s that for fuel?!

The real plus of these bowls is that you can make them ahead of time! I rarely have time in the morning to make anything from scratch, so I’ll make oatmeal and compote and store them separately in the fridge until I make them.

Apple Juice Syrup Prepare 4 cups of unfiltered apple juice or cider in a medium saucepan. Bring to a boil over medium heat and reduce until the liquid thickens to a syrupy consistency. I have never cooked with rhubarb… can you believe it? I was so excited to find Rhubarb in my first CSA box from Glen Valley Organic Farm. CSA stands for Community Supported Agriculture. The idea is that you register with a farm at the beginning of the year and pay them a lump sum to provide you with a certain number of boxes during the summer (some offer a longer period) of fresh produce (fruits and vegetables). , some even offer eggs!)  I love that the produce is so fresh, literally picked that week, and that it supports the local economy. There are tons of these around the world, so just Google “CSA program” to see if there’s one near you! So far, it’s been fun to discover new things that I would normally have my eye on at the grocery store or farmer’s market.

Naturally, for my first recipe I had to make a traditional crumble with rhubarb, but healthier – obviously! I love my cake crumble, so I kept the coconut sugar to a minimum. If you like a sweeter crumble, feel free to increase the amount of sugar in the recipe, as rhubarb can be quite tart. This recipe is vegan (using vegan butter), gluten-free (using gluten-free oats), dairy-free, and refined sugar-free! I added yogurt because it’s a breakfast recipe, but if you’re having it for dessert, just add some coconut ice cream and enjoy 🙂!

Substitution: Instead of vegan butter, you can use regular butter. Instead of coconut sugar, you can use brown sugar, and instead of grandma’s apples (my favorite because they’re tart and crunchy), use whatever you can.

The combination of maple syrup and almond flour gives them a mild marzipan flavor, which is really just a bonus to their overall awesomeness!

And okay, these breakfast bars might not be your healthiest and most nutrient-dense breakfast, but they’re really tasty and worth it to treat yourself to something sweeter every now and then, right? I’m not saying you should go out and buy a bag of Oreos or some other highly processed non-food, I’m just saying you shouldn’t be eating a green smoothie or nutritionally packaged oatmeal every morning of your life. . Treat yourself to waffles, breakfast oat bars, pancakes and spend the rest of your life eating them! However, these bars are somewhat healthy! No cane sugar, just maple syrup and coconut sugar. No gluten, just oats and almond flour. There’s also homemade almond butter and coconut oil to tie it all together. And the result? Pure heaven!

It is also very easy to make! All you do is basically just throw all the dry ingredients into a large bowl. Next, melt the coconut oil in a small saucepan, add the maple syrup and almond butter, and heat slightly to prevent the coconut oil from solidifying again, as the maple syrup and almond butter are likely too cold. refrigerator.

Anyway, let’s continue the preparation. Now that you have the dough ready, pour it into a square springform pan or any kind of baking pan you like, preferably lined with parchment paper because the dough is very sticky.

Bake at 175C (347F) for about 35 minutes until the top is golden brown and you’re good to go! Let it cool completely before slicing (trust me, you’ll cut it when it’s hot) and eat it deliciously! Store it at room temperature for a few days, covered with a cloth or to protect against flies.

Just look at it, it’s so beautiful. Crispy on the outside, soft on the inside. And about the marzipan flavor? There’s something about the combination of almonds, maple syrup (maybe coconut sugar, though I added maple sugar to this as well) and rhubarb that gives it a marzipan flavor. It’s not my idea though, it was my mum who came up with marzipan and I think it’s spot on. what else can i say It’s delicious, try it!

To make flax eggs, you need 2 tablespoons of ground flax seeds and 5 tablespoons of water (1 egg = 1 tablespoon of ground flax + 2.5 tablespoons of water).
