If you love LIGHT desserts that taste great, this is the dessert for you. I saw this on Amanda’s Cooking (what a great name!😉) and had to try it. The biggest changes I’ve made are adding a little more oil to the crust so it’s better and doubling the filling ingredients. I like a nice big slice of this dessert and found that by increasing the filling (but not the sugar!)  it fits perfectly in a 10×15 pan. It also fits in a 9×13 pan, but the ingredients rise to the top, meaning random graham cracker crumbs in your fridge. My fridge was even worse, so no complaints from me!

Make sure your butter and cream cheese are at room temperature. Add the butter and cream cheese to a large bowl and mix until smooth with a hand mixer. Add in the confectioners’ sugar and mix again to prevent the sugar from becoming cloudy.

Now add chopped pineapple to 2 cans. Here’s what you need to taste test… Start with 1 jar. Some of my kids loved this dessert with 1 can of pineapple, but my husband and I liked 2 cans better. Honestly, it’s not a huge difference, but if you have someone who is on the fence about pineapple desserts, 1 might be a great place to start.

Once the pineapple is mixed in (I do this with a spatula) you can fold in the whipped topping. Whether you make your own whip or use store bought (cold whip) is up to you.

Now that the filling is done, you can assemble the dessert. Pour 3 cups (should be 4 cups total) of graham cracker crumbs into the prepared 10×15 pan. Press down until the crumbs are compact and even. Pour the filling over the top and smooth it out with an offset spatula or a mixing spatula.

Finally, sprinkle the remaining graham cracker crumbs on top. Refrigerate the dessert and get ready to serve. Although we eat this immediately after making it, I like to refrigerate it. Especially on a hot summer day!

This is a huge recipe, enough to feed 12 people very well. (I bet 24 people could eat one slice and be satisfied!) I recommend a 10×15 baking dish. If you’re anything like me, you probably have 6 different containers in your closet, and they’re all different sizes. (But everything is marked 9×13, of course 😂) Grab the biggest one you have, it will be at least 9×13. This dessert fits in a 9×13 pan, but no smaller.
