Crescent Rolls – While I’m all about saving money, I don’t skimp on brand crescents for this recipe. The Pillsbury brand of crescent rolls are excellent, baking to a buttery, flaky, golden brown consistency. You’ll need two 8-ounce packages that will be opened, and bent to the point from the long bottom of the triangle. Watch my video for the technique.

Crescent Roll Breakfast Casserole Recipe

Ham – You can use ham steak, leftover ham, or thick cut deli meat for this recipe. Use any ham flavor you prefer.

Eggs – Farm fresh, or cage-free large eggs work best for a fluffy texture. You will need 6 whole eggs.

Milk – Whole milk helps make the egg mixture fluffy and flavorful, but if you want a richer flavor, use light cream or half-and-half.

Cheese – I usually use mild cheddar for my casseroles but you can use shredded jack, swiss or whatever cheese you prefer or have at home.

Spices – Salt and pepper are all you really need to flavor your casserole! Green onions are also a nice touch to the flavor and presentation of the eggs.

Unroll the crescents and wrap into a crescent shape according to the package instructions. Place 16 rolls evenly in your greased pan.

In a large bowl, whisk together the milk, beaten eggs, and spices. Once fluffy and combined, add half the scallions, ham and half the shredded cheese.

Bake until the crescents are fluffy, golden brown and firm to touch. The egg mixture should be fluffy and not wet in the middle for long. A tester inserted into the center of the casserole should come out clean.

Start by preheating the oven to 350 degrees. Combine softened cream cheese, sugar, lemon juice and lemon zest in a small mixing bowl. Beat on low speed until well blended.

Line a cookie sheet with parchment paper or a silicone baking mat. Unroll Pillsbury™ Refrigerated Original Crescent Rolls into a sheet. Do not separate with jagged edges! Press the edges together to form a rectangle of dough. Spread the cream cheese mixture over the dough, leaving a 1/2″ border around the edges. Top with fresh berries.

Roll the dough lengthwise. Press the ends together to seal and make sure any other holes are pinched together to seal.

Bake for 20-25 minutes or until golden brown. Be careful not to over bake or else all the filling will come out. Then I added some fresh berries on top to make a beautiful presentation for our Easter brunch!
