I’ve been researching the perfect peanut butter cake recipe for years – and I can finally say this one is already perfect. It was very moist and soft, and the cake crumb was soft and slightly dense, but not heavy. The flavor has a rich peanut butter flavor as the cake is made with peanut butter in the batter and topped with a peanut butter frosting. To make sure it doesn’t end up too sweet, the frosting has just a touch of cream cheese to cut the sweetness and add a delicious tang. The icing is creamy and peanut butter, the perfect topping for true peanut butter lovers.

After testing and re-testing, I found that the peanut butter really dries out the cake and makes it too dense – because peanut butter is heavy. To ensure the cake is moist and tender, but still has enough peanut butter flavor, there are 3 important components to this recipe:

Pan dimensions: I used two 8″ round pans with 2″ sides (20cm round with 5cm sides). They bake at 350F (180C or 160C fan forced) for about 30 minutes. If you only have sandwich tins with low sides (about 1.5 inches) – then use three 8-inch discs. They take about 22-26 minutes. Alternatively, you can use two 9-inch (23-cm) pans. I made a thin layer of frosting around the edges to seal in any crumbs, then put the cake in the freezer for about 20 minutes to harden the frosting and completely “seal” the crumbs.
