I still seem to get this question a lot and the mug cake is exactly what it sounds like. A cake in a cup! It’s great, because you don’t need to spend a lot of equipment to make this simple chocolate cake.

Seriously though, you’re probably over mug cake recipes and you’re probably rolling your eyes at me right now, but stop! I promise you this is not like any other mug cake. I have tried many mug cakes and hated them.

I thought they were a great concept for a quick dessert fix, but nothing beats baking a whole cake or pie. I hate how all the mug cakes come out SPONGY and have a very chunky texture.

Last week, I craved chocolate like everyone else. It was a terrible situation. We didn’t have any dessert at home because I wasn’t cooking and I didn’t want to run around to get anything so I thought I’d give a cupcake a shot.

Gemma’s Best Ever Chocolate Mug Cake

The first batch turned out so terrible that it turned into a recipe development hour. Like, I threw it in the trash and it was a rubber sponge thing.

The second one was a little better but still very bad. The third one I changed some ingredients and added a little more and it came out as I wanted but I knew it could be better so on the fourth try I finally got to work and got the exact texture I wanted.

Add the liquids. Next, add the liquids to the bowl and mix until it forms a paste-like consistency and there are no lumps of dry ingredients left.

Pour into a jar. As this is a microwave manga cake, make sure to pour the batter into a microwave-safe cup!

Time to add! If you’re using the chocolate hazelnut spread, go ahead and add that right into the middle! Same for other additions. You don’t have to push it down, the dough will cook around it and sink to the bottom.

Microwave! Cook time! Place the pot in the microwave and cook for 70 seconds (please see important notes below).

Ok, I get asked this a lot too and the reason this mug cake is made without any eggs is what gives it that spongy texture!

If you think about it, it makes sense. Why put a whole egg in a mug cake when a regular full-sized cake usually calls for one or two eggs? This is not a full size cake. And of course I’m not asking you to cut the egg in half. Just leave it! Best texture, ever!

You can, but I tried it with self-raising powder and it just came out spongy, not what I wanted.

I like my cakes light, fluffy and moist and with self-rising flour, it doesn’t produce the results I want.

There have been many people who have used self-raising flour in this recipe and haven’t noticed a difference, so if you’re up for the challenge, I say go for it.

No, this is microwave only. I had readers who baked this but I don’t remember exactly how and/or what temperature or time.

Please remember that all microwaves are different so they may produce different results and if you are not careful you can overcook this mug cake. *When this recipe was prepared, we were in another house. That microwave at home took me 70 seconds to cook a mug cake. We were in a new house when the video was shot. In our current microwave it takes 90 seconds…that’s why it has two different times. The fact remains: all microwaves are different and can give different cooking times, which proves to be true in two microwaves I have in two different homes.

If you want, you can leave out the tablespoon of chocolate hazelnut spread entirely, or you can use a different spread of your choice (peanut butter, biscoff, etc.) or chocolate chips like I used in the video. I just thought it would make the cake more moist but the cake itself is moist enough without it!

** This recipe is made specifically for the microwave. I made it for the microwave. I don’t know the oven cooking time or temperature… I imagine it would be a much faster cooking time at a lower temperature, but since I haven’t tried the oven recipe, I can’t give any specifics. Sorry!

No eggs? correct. There are no eggs in this recipe. why? It is the egg that makes the sponge cake. If you think about it, when you bake a full-sized cake, you usually use 1 or 2 eggs…

Self-raising flour? I tried this with auto boot and it doesn’t work. At least for me it was too spongy so I felt like it didn’t work at all. You are more than welcome to use it, but please note that I do not recommend this method.

Oreo Mug Cake

This is the best mug cake in the world I have never tried a better mug cake and I have tried many mug cakes but this is the top of my list!!!

I just made this, and when I was making the batter it was watery, it looked more like pancakes than cake, so I added an extra 2tbsp of flour which seemed to do the trick. Although it tastes pretty good, it tastes more like pancakes and has a less pancake like texture. Overall, it’s a good snack if you don’t have any

Appreciate the comment, C! Sorry it didn’t work for you. In my opinion it’s unfortunate that the 3 star rating is due to some user error. If it is not well done, cook it longer, as mentioned in the recipe, microwaves have different strengths. It was undercooked and probably dense. This Vanilla Mug Cake with Chocolate Chips is quick and easy to make in the microwave. It’s the perfect single-serve dessert to satisfy your sweet tooth!

That recipe was so popular that I decided to make a nice vanilla cake. It turned out to be quite a task! I tried dozens of recipes and was always disappointed. Some were really odd textures. Others had no taste. I kept experimenting with different variables and ratios of ingredients and I think I finally have… a vanilla cupcake.
