My Marble Cake is essentially a pound cake with dense, firm crumbs. But it’s amazingly moist and buttery. Full of vanilla flavor with a hint of chocolate. Great to enjoy on its own, cut into chunky slices. But I won’t judge you if you want to add a little chocolate frosting 😉

High Altitude Marble Cake With Chocolate Drip

This is a marble cake that has been around for a long time. I’ve been experimenting with Marble Cakes for a while, but the results (while still delicious) often lacked a defined marble swirl. The two cake batters would often come together and I couldn’t achieve that amazing finish. Then one day, I realized that the problem wasn’t my technique, but the kind of cake I was using.

Instead of a soft and flimsy cake like my favorite yellow cake, I needed a cake that was firm and provided a crisper crumb. Thankfully, my favorite vanilla pound cake was the perfect place to start. After two tries, you finally have the marble cake of your dreams!

Using a dessert spoon, gently pour one spoonful of cake batter into prepared pan, alternating vanilla and chocolate. Using a light hand, place the cake batter next to each other without whisking it together. There is no perfect way to do this. This is what makes each cake unique!

Continue layering the cake batter side by side and on top of each other. After you’ve used up all of the cake batter, use the back of a spoon to smooth out the top so it bakes evenly. You don’t have to be precise here either!

One of the secrets to making moist, soft crumbs is to cream the butter and sugar correctly! Yes, the first step in the recipe is key to creating smooth, buttery crumbs.

Like many butter or vanilla cakes, this recipe starts by creaming the butter and sugar together. This means mixing the two ingredients together using an electric mixer. However, many people will stop when the two ingredients are simply combined.

However, creaming butter and sugar means continuing to beat the butter until it is pale, light and fluffy (almost creamy). This will give you a soft and tender cake. If the butter is lovely and soft, it doesn’t take long, a few minutes on medium speed should be enough.

Note: Do not rush this step by setting the mixer to higher than medium speed. Mixing the butter and sugar too vigorously (called over-creaming) can result in dense, sticky streaks in the cake. no that’s fine!

Chocolate Marble Pound Cake

You can also use this recipe to make a large round cake using a 9-inch cake pan or a Bundt pan. Bake a larger, flatter cake so you can create less swirls.

See the paragraph above on making perfect crumbs. It is very important to cream the butter and sugar correctly. Make sure the butter is soft first, 2-3 minutes is all it takes. Also, use a baking scale to measure ingredients, especially flour, for accuracy. Don’t mix the final cake batter too much and don’t bake too much!

Leftover cake can be stored at room temperature wrapped tightly in plastic wrap or in an airtight container. It will also freeze really well.

Marble Cake Recipe

I used Pullman’s Loaf Tin for this recipe. This is a fairly large cake mold (12″ x 3.9″), so if you don’t have one and plan to bake the mixture in a regular loaf mold, I recommend halving the amount of cake batter. A lot in a regular loaf tin. The grilling time should also be reduced to about 45m, but keep an eye on it. Depending on your oven, this may take an hour. The skewers should come out clean when cooked.

It Only Gets Better: The 9×13 Marble Cake

Beat the whole eggs, yolks and sugar in a bowl of a stand mixer on medium speed until thick.

Just stir the mixture to mix and there are no more dry flakes. Be careful not to exaggerate. It’s also worth using a spatula to stir the bottom of the bowl to ensure everything is properly mixed, as the mixer can sometimes miss pieces.

Finally, add melted butter and mix by whipping. Pour batter into a very large piping bag and set aside.

Beat the whole eggs, egg yolks and sugar in a stand mixer bowl on medium speed until 2 m thick.

Rum Scented Marble Cake Recipe

Finally, pour in the melted butter and stir to combine. Place the cake batter into a large piping bag.

Lightly grease the baking tin with butter and add a few tablespoons of flour. Shave the flour to coat the entire vat, then shake off the excess.

We will be piping alternating vanilla and chocolate batters to make the marbles. Starting with the vanilla, draw a line down the center of the tin. Immediately bring the chocolate batter and pipelines on both sides of the vanilla strips. You should now have 3 rows of chocolate/vanilla/chocolate at the bottom of the can.

In the next layer, pipe a line of chocolate in the center (on top of the vanilla line you piped first), then pipe vanilla strips on either side. Repeat this, alternating the chocolate and vanilla stripes, until you fill the tin about 4/5 full.

Close the loaf tin and bake in a preheated 165C/350F fan assisted oven for 1 hour 45 minutes.

While the cake is baking, boil 50g sugar and 50g water together to make quick simple syrup.

Once baked, open the lid of the cake tin and pierce the center with a skewer to cook.

Poke more holes in the top of the cake with a skewer and pour sugar syrup over it to soak. Cool to the touch. We don’t want it to freeze.

German Marble Cake (vegan)

While the cake cools, place the hazelnuts in a 180C/355F preheated oven and bake for 8-10 minutes or until the shells start to burst. Then remove from the tray, pour into tea towels and wrap.

Soak the hazelnuts in a dishcloth for 5 minutes, then rub the hazelnuts on the dishcloth to remove the shells. Set the skin to one side. Cut the hazelnuts in half and put them back in the oven for 5-8m or until a nice light golden color. Set aside to cool.

Start the ganache about 20 m before the cake has cooled. Put the double cream in a pot and put it on medium heat. Place the chopped chocolate in a bowl.

When the cream boils but does not boil, slowly pour 1/3 over the chopped chocolate and stir well with a rubber spatula. Then add 2/3 of them, stir them together, and finally add the remaining cream. Pour the mixture into a long bowl and blend with a hand blender. This makes it very smooth and removes air bubbles.

Place the cake in two small glasses, let stand on a work surface, then pour the ganache all over the cake. Leave on for 10 to 15 minutes. If you add hazelnuts too quickly, they will fall off, so keep them firm so they stick together.
