I have wanted to make a keto blondie recipe for a while now. Even though I have cranberry and zucchini blondies, I’ve never made one without a decorative addition.

I often refer to these brownies as brownies, and the texture is similar to brownies do- ooey, gooey, fudgy, and rich. The taste is different, because there is no cocoa powder. Sweet, a hint of vanilla, and a mouthful of chocolate chips in every bite!

These gooey blondes are quick and easy to make. Make sure your dough is smooth when you put it in the oven, otherwise, you’ll be left with dry buns!

In a mixing bowl, mix together your almond flour and baking powder and set aside. In a separate bowl, whisk together your softened butter, eggs, golden nut flavor, and vanilla extract, until combined. Add the dry mixture to the wet mixture and mix until just combined. Fold in your chocolate chips and other ingredients and transfer to an 8×8 inch baking pan. Bake the skewers at 180C/350F for 20-22 minutes, until a skewer comes out clean. Allow the blondies to cool in the pan before slicing.

There are many reasons why your keto blondies may dry out. What matters is what you have cooked. Remember, these fritters are still cooking as they cool, so take them out when they’re done.

Because my Keto Edible Cookie Dough was such a hit last year, I thought I’d start my own no-bake season with the same recipe – no-bake keto chocolate chip bars.

The idea is the same: cake batter (without eggs) in bar form. It tastes just like regular cookie dough!

AND it’s sugar-free, low carb, and packed with healthy fats! It basically checks all my dessert boxes and is great for those who follow a low-carb lifestyle.

These no-bake keto chocolate chip cookie sheets are made with 6 ingredients: almond flour, almond butter, ghee (or coconut oil to make it vegan), sugar-free sweetener, and chocolate chips.

Best Ever Keto Blondies (no Sugar!)

Collect all the ingredients. Add the almond butter and ghee to a mixing bowl and microwave for 20 to 30 seconds or until soft. You want these ingredients to melt so they can be easily kneaded.

Add the remaining ingredients except the chocolate chips to the mixing bowl and stir until well combined. Once the dough mixture is well combined, fold in the chocolate chips.

Transfer the dough to a lined pan (mine is 9″x5″) and freeze for 1 hour. When you are ready to serve, dry, and use a sharp knife to cut squares.

I like to add pure vanilla extract (1 tsp), ground cinnamon (½ tsp), and sea salt (¼ tsp) to these cookie bars. For me, these flavors come out as delicious and delicious. To keep the food lists short, you can skip these additional additives but I recommend using less sea salt).

To keep this recipe keto, you’ll want to use a sugar-free sweetener, such as Monk Fruit Sweetener, Swerve, or Truvia. I use Swerve Confectioners Sweetener and love how sweet and consistent these bars are.

I have also tried the recipe using monk fruit sweetener and the texture is fine but the taste is not quite the same. Also, I’ve tried Swerve Granular Sweetener (not the food manufacturer’s version) and the bars come out fine. It’s still sweet and not too smooth.

If you do not use a calorie-free sweetener, my next recommendation is to use liquid stevia (I have not tried the recipe with Stevia, so I am not sure as much as you use), sugar-free sweetened water.

If you go with a syrup sweetener (this includes pure maple syrup), be sure to limit the amount of sweetener to equal parts almond flour. For example, if you use ½ cup of sweet syrup, add ½ cup of almond flour.

Hello Cathy! Unfortunately, coconut flour cannot be used as a 1:1 substitute for almond flour, as it contains four times the amount of water. You can make my Keto Coconut Flour Cookies (https:///keto-chocolate-chip-cookies-with-coconut-flour/) and turn them into bars instead of cookies. Bake at 350 for 20 to 25 minutes, until edges are golden brown. Hope this helps! xo
