How To Make Japanese Dessert Recipes – When you hear the word “wagashi,” you probably think of the style of nerikiri wagashi served during a tea ceremony. However, the term “wagashi” is applied to all kinds of traditional Japanese delicacies, from simple Daifuku mochi and taiyaki to street food to the more classic nerikiri wagashi. Most wagashi consist of ingredients like rice flour, beans, and agar that have been used for centuries. Traditional wagashi uses only plant-based ingredients, making these Japanese delicacies very different from Western delicacies (and therefore suitable for vegetarians). Wagashi can be served both casually and formally depending on the style.

Mix glutinous rice flour and sugar and add half of the water. Stir until the sugar dissolves and the mixture is smooth. If there are no lumps, add the rest of the water and mix until you have a smooth paste. Put it aside.

Use a spatula to smooth the white bean batter in the bottom of a microwave-safe mixing bowl and cut into the batter to increase the surface area. It helps to cook faster. Bake in a microwave oven at 500 watts (low power) for 1.5 minutes. It should look slightly white when it comes out of the microwave and should be dry on top but still moist on the bottom. Stir well, flatten, cut again and microwave for 1.5 minutes.

The top should now look white and dry. When touching the surface, it should not be sticky. If your beans stick to your fingers, heat longer.

Heat a mixture of glutinous rice flour, sugar and water in a microwave oven at 500 watts (low power) for 30 seconds. At this point it should be partially cooked. Mix it up and microwave it for another 30 seconds. Stir again. The mochi should now be sticky and translucent. Add this mochi to the white bean paste and stir until well combined.

Now the dough is ready to be kneaded. Transfer the paste to a damp cotton cloth. To knead it, take two opposite corners of the cotton cloth and fold the dough. Repeat with the other two corners. Continue kneading until the dough is smooth.

Divide the dough into small pieces for quick cooling. Let the dough rest for about 1 minute, but don’t let it rest too long or the edges will dry out and start to crack.

After a minute, collect the dough in the center of the cloth and mix again. The surface should be smooth.

Use the line test to check for doneness: Draw a line on the dough with one finger. If you don’t see any lumps or cracks, the dough is ready.

You can use the dough right away, or wrap it in plastic wrap and refrigerate overnight. The next day, the dough will be more stable and easier to work with (it is not necessary to leave it overnight in the refrigerator). Dango is one of those desserts that takes me back to my childhood in my grandmother’s little apartment. I was lucky enough to go to Japan every summer to visit my grandparents and eat a lot of good food. Every night we ended the day with something delicious. My dessert of choice was homemade dango and mochi rather than ice cream or cake. The chewy, soft and sticky fine rice cakes were delightful to eat. There are many different varieties of Dango, but I wanted to share the Hanami Dango recipe first because it is the prettiest and easiest to make.

Hanami Dango or Sanshoku Dango (3-color dango) is another variant of the dango family. It’s a pink, white and green dango on a stick, and there’s even an emoji on the iPhone! This special tricolor dango is sold at any time of the year, but is popular during the cherry blossom viewing season in the spring. Hence, the name Hanami Dango literally translates to “viewing flowers”.

Plain dango balls taste like sweet rice. It sounds boring, but what makes this Japanese dessert special is the texture. Chewy, soft and tender but firm and toothy. Some dango come with toppings like sweet black sesame paste, sweet soy sauce, or anko (sweet red bean paste). However, Hanami serves Dango as is. Green dango is usually slightly earthy because it has a mugwort (yomogi) flavor, but matcha can also be used. Pink dango is sometimes flavored with sakura or strawberry powder, but it usually tastes like white dango.

Dango is traditionally made only with rice or rice flour. However, my grandmother always used tofu to make it softer, softer and chewier. I’ve always made this with tofu, but I was curious how it would turn out using only Japanese rice flour. I’ve tried making dango with just rice flour, which is firmer and less springy in texture.

These 3 key ingredients are needed to make soft and chewy dango just the right amount of firmness:

Step 1: The first step is to mix the tofu, flour and sugar in a large bowl to make the batter. Using your hands, press and mix with a kneading motion until everything is well combined. Then divide the dough into 3 equal parts.

Step 2: Add matcha powder to one portion of the batter and mix until the color is uniform. Add strawberry powder or pink food coloring to another portion of the batter and mix until the color is uniform.

Step 3: Divide the dough into 5-6 equal sized pieces. For 5 pieces, one piece should weigh 14-15 grams. 6 pieces are 11-12 grams.

TIP: To make perfect round balls, dust your hands with a little rice flour to prevent them from sticking.

Step 5: Boil a pot of water and add the dango balls. Cook until it starts to float on top. Then use a bucket with a broom to scoop them out.

Step 6: Place the dango in a bowl of ice water to prevent it from cooking. Step 7: After cooling, put the dango balls on bamboo skewers in the following order: green, white and pink. Repeat for remaining balls.
