I think it’s similar to our modern refrigerator 🙂 Icebox cake is usually made from a few ingredients like whipped cream (sometimes instant pudding), wafers/crackers/biscuits/ladies fingers, fresh fruits and then the cake is set. Refrigerate before serving.

This is an adaptation of the classic icebox cake, popular in the Philippines. It is also known as Mango Royale, Mango refrigerator cake, Mango Graham Float. The mango used in the Philippines is the Carabao mango, which is very sweet and has an amazing taste and is widely available in Southeast Asia. Of course, I don’t have access to these wonderful carabao mangoes and we have to settle for whatever we have here, but the icebox of mango floats was still pretty good

Cons: They don’t last long. It tastes better the first 2-3 days, then it gets a bit wet

1. Line the bottom and sides of the pan with parchment paper. I use two pieces of parchment paper to overlap

2. Peel the mango. Use a very sharp knife to slice through each side past the seed. You don’t want to get too close to the seed as it is very fibrous. Then cut into 1/4 inch thick slices. Set aside

3. Make sure the whipped cream is chilled in the fridge before whipping. Beat the heavy cream on medium speed until thick and creamy, holding very soft peaks. Do not whip until stiff

4. Gently fold in the condensed milk and mix with a spatula. Cover and chill in the fridge while you prepare other things

5. Line bottom of pan with graham cracker sheet. Break the crackers into small pieces as needed to cover the base

9. Then another 1/3 of the whipped cream followed by the mango slices. Cover the graham cracker sheet with another layer, then cover the last 1/3 of the whipped cream and decorate the last top layer with mango slices. You get the idea! Garnish with graham crackers on top

10. Refrigerate for at least 4 hours. Then I lift it out of the pan onto a serving platter and refrigerate for about 30 minutes. This makes the cake firm enough to slice when I’m ready to serve, otherwise, it’s too soft to cut
