The great thing about it is that it has everything you need, it’s easy and quick to make, lots of protein, vegetables and some carbs, and it’s very tasty.

Easy Oatmeal Recipe

For example, you can easily sub in sweet potatoes for red babies, or even sub in cauliflower rice if you need low carb.

You can also use all your favorite seasonings, but of course I will share my favorite here. Let’s get into the details!

Place the potatoes in a microwave safe bowl and heat on high for 3 minutes to soften. Heat a medium skillet over medium high heat and add oil. Add the potatoes and sprinkle lightly with all the seasonings.

Fry the potatoes until browned and dry, about 3 minutes, then use a slotted spoon to remove to a bowl and keep warm with aluminum foil.

Add a little more ghee to the skillet, then add the chopped kale and water and cover until wilted. Uncover and stir, cook until you reach your preferred consistency. Sprinkle with sea salt and pepper, then add to the same bowl as the potatoes.

To the same skillet, add sausage or ground meat and cook until browned, about 2 minutes. Add this to the bowl as well and cover to keep warm.

Adjust the heat to medium and add the remaining tablespoon of ghee to the skillet to fry the eggs. Cook the egg to preference, spooning some ghee in the pan over the top of the egg, or flip if preferred.

All that said, quick and easy breakfasts are the name of the game lately and these Breakfast Bowls not only kill it in the deliciousness department, but they’re even more advanced (reheat in ONE minute!) and freezer-friendly too.

Have you ever heard the saying “eat breakfast like a king, lunch like a prince, eat lunch like a pauper”? I dig it. Well, usually breakfast and dinner are both eaten like I’m the Queen of England, but for me a healthy breakfast makes a huge difference in how my day goes.

Make-Ahead Breakfast Bowls contain a hearty combination of Homemade Potatoes o’ Brien (potatoes with green peppers and onions, y’all, that smell UNBELIEVABLE while roasting!) silky scrambled eggs, shredded fresh cheese, and spicy green onions that are complimented by the egg pairing. my favorite – tortilla chips and salsa – then served hot and fresh, or divided into individually sized containers to keep in the fridge or freezer to hold, reheat, and return, throughout the week. I’ve been making a batch of Breakfast Bowls on Sunday and heating them up in the microwave during those crazy weekday mornings. It’s so delicious and, while I love a breakfast of berries, bananas, and homemade walnut butter, I can hardly turn down something hot and hearty – especially in this weather!

I created this bowl to be vegetarian, but if you want a little more protein, go ahead and brown 3/4lb breakfast sausage or bacon and add to the bowl. Dice or mash fresh avocado to add more healthy and satisfying fat to the bowl, and/or snag a tortilla and make your own breakfast burrito with the ingredients. Bake both pans for 30-40 minutes, or until the potatoes are golden brown and tender, stir the vegetables and rotate the pan halfway through. Psst: If you line your pan with foil, make sure to spray it with non-stick spray first – it really makes a difference!

Spray a large pan over medium heat with nonstick spray then add the eggs and stir until just cooked through – they should be slightly silky and glossy.

Last stop – assembly! Pile potatoes and eggs into a bowl and then top with freshly shredded cheese and chopped green onions. Like I said, I love eggs and tortilla chips and salsa, so I put them in my breakfast bowl before eating too. A diced avocado or guacamole would be heavenly too!

To reheat from freezer, microwave bowl on 50% power for 1-1/2 minutes, stir, then microwave on full power until heated through, stirring every 30 seconds or so.
