Most of the time, when someone talks about a mug cake recipe, they mean it’s made in the microwave. This type of recipe is a quick, easy, and smaller version of a typical (larger) chocolate cake.
I shared this mug cake recipe on the blog years ago. Although it has always been a very popular recipe, it has received mixed reviews. I’d say it’s a 50/50 split with people either they really like it or people really don’t care about it. And the #1 complaint I hear? People didn’t like the spongy texture that resulted from double-baking this dessert with eggs.
So the girls and I eliminated the eggs and tried many different variations of this recipe. We wanted a cake that was dense, moist and rich in chocolate.
Mug Cake Recipe Vanilla

For these cake cups, simply mix a few common baking ingredients together in a small bowl. Then divide the batter into two cups or small mugs and microwave for two minutes.
I like to serve this cake in a cup with fresh blueberries or strawberries. It’s especially cute for a little Valentine’s Day celebration.
A dollop of fresh whipped cream or a small scoop of ice cream would be great too. My parents taught me to eat warm chocolate cake with a scoop of cold vanilla ice cream – it’s so delicious!

I recommend letting the mug cake cool in the microwave for ten minutes before eating, but I have to admit that I always dig right into it.

Microwave Chocolate Mug Cake Recipe

Fold in the chocolate chips. Divide the batter between 2 microwave-safe cups (mine holds 6 fluid ounces), then top with a few more chocolate chips.
Microwave both cups at the same time on high for 2 minutes. The cake will rise above the rim of the bowl and fall back down after cooling. Microwaves vary in power, so adjust accordingly. The cakes should be cooked but very moist and slightly moist in the middle.

Note: I used 2% milk when testing the recipe, but you can use whatever milk you have on hand, whether it’s whole, skim, or almond milk.
