In a mixing bowl, sift together all the dry ingredients—flour, baking powder, cinnamon, ginger, potato, food coloring, salt, and nutmeg.

Mandaz should be cooked for at least 4 minutes on each side. Once it’s a nice golden brown color, use a strainer to remove the oil and transfer it to colander lines to remove the excess oil. Repeat this until all the mandas are cooked.

Add 1 tablespoon ground cinnamon and 1 tablespoon confectioners/powdered sugar to a paper bag. Shake the bag lightly to combine the sugar and cinnamon.
