It is probably one of the easiest breakfast recipes and is very versatile and easily customizable. And, dare I say, the best casserole recipe I have on my site. I’m not kidding here folks.

Even though this is called a breakfast casserole, we love this any time of day – breakfast, brunch, lunch, or dinner. This is also great for overnight and early morning visitors on holidays. Whip up some biscuits and grits and you’re good to go!

This casserole is very easy to make. Start by cooking the bacon in a large pan. Remove the bacon but leave all the drippings in the pan. Place the hash browns in the skillet and cook until they begin to brown. Place the hash browns in a baking dish. Top with bacon and cheddar cheese. Mix eggs, milk, and ranch dressing mix. Pour over hash browns and bake.

You can use pre-cooked bacon in this recipe. One pound of cooked bacon is about 4 ounces or 1 cup. I like to buy big bags of pre-cooked bacon bits at Sam’s Club and Costco. It works well in casseroles like this one.

You can make this casserole in advance and refrigerate or freeze it for later. If you bake this after taking it out of the fridge, you may need to add a few minutes to the cooking time. To bake the casserole after freezing, thaw completely and bake as directed below.
