I love hard boiled eggs. They are great for scrambled eggs, egg salad, or just eaten with a sprinkle of salt.

The biggest problem when it comes to hard-boiling eggs is that people can easily overcook them, which results in a dark green color around the yolk and a somewhat sulfuric taste. Here’s my method on how to hard-boil eggs so they don’t overcook.

Did you know? Old eggs are easier to peel than fresh eggs. If you’re planning to make hard-boiled eggs for Easter and want to make sure the eggs are easy to peel, buy your eggs at least a week ahead of time (two weeks is better, they’ll keep).

If you’ve boiled a batch of eggs that are hard to peel, try breaking the shells around and soaking the eggs in water for a while. It seems that the water often seeps deep enough under the skin to make it easier to peel the egg.

The size, temperature and age of the eggs affect how easily they peel after hard boiling. For best results, we recommend using large eggs straight from the fridge that are a week or two old.

Foolproof Hard Boiled Eggs Recipe

The dreaded gray-green ring around the cooked yolk is caused by the sulfur in the yolk combined with the hydrogen in the egg white. This is either over-boiling the eggs or using water with a high iron content. This recipe gently cooks the eggs, preventing overcooking and green ring. If you have particularly hard water, use filtered water to cook eggs.

If you need easy-to-shell eggs and you have fresh eggs, you can try steaming the eggs for 15 minutes. Pour an inch of water into the pot and place the steamer basket. Bring to a boil. Place the eggs in the steamer basket, cover and steam for 15 minutes (more or less, check!). (Or if you don’t have a steamer basket, steam the eggs in half an inch of water.) The steam penetrates the skin a bit and makes it easier to peel the eggs. (You can also steam the eggs in an oven!)

If you live at high altitude, let the eggs sit in hot water longer or lower the heat and simmer for 10 to 12 minutes.

Induction ranges boil very quickly and retain very little heat for this method to work well. If you have an induction range, we recommend steaming your eggs, which will give you much more predictable results.

How To Make Hard Boiled Eggs In Air Fryer

The good thing about this method is that even if you forget and the eggs sit in the water for a few minutes longer than you planned, they will still be good.

Some people like their eggs lightly or hard-boiled than others. If you want your eggs to still be slightly runny in the center, let them soak in hot water for just 6 minutes or so.
