Imagine my shock when I read that study did nothing to stop me from craving an inexplicably terrible wiener that day. I went out and bought a pack, enjoying this wonderful thing called life while enjoying a couple meals that afternoon.

Listen, everyone: I realize Spam isn’t the best for me, but I don’t want to feel ashamed of a food that’s part of my culture, a food that thrives on the worst of days.

My fellow Filipinos and expat Filipinos can probably relate. Shelf-stable canned meat was introduced to the Philippines and other Pacific colonies during World War II, a staple for US troops. At this point, microwave and stir for 15-second intervals until the garlic is charred golden. (Depending on your microwave, this may take 2-3 minutes.)

Strain the garlic, reserving the oil, in a sieve over a bowl. Transfer the garlic to a plate lined with paper towels and season with a pinch of salt. Keep aside to cool.

In a bowl, combine the diced tomatoes, onion, chile pepper (if using) and vinegar. Stir to combine and set aside to let the flavors blend.

Heat a frying pan on medium heat. Add the reserved garlic-infused oil. Add the rice to the pan and stir constantly to break up any lumps, avoid burning, and coat with oil.
