During the holidays, when I feel like it’s too much fun, there’s nothing planned in the parties, the plane is usually empty, reminding me uh-oh, I fed my friends’ babies that day.
Open the cupboard door, see half a dozen eggs, half a carton of milk, cheddar cheese, leftover sausage from the previous day’s biscuits and gravy, a little cauliflower, and leftover (cooked) spinach.
The main ingredients are eggs, cheese, milk and bread. It is the easiest thing in the world to arrange. We have a tuna breakfast sandwich on site that is one of my favorites.
The great thing about a breakfast casserole is that you can add almost anything you want to the base. Italian stuffing is my all-time favorite, but bacon or ham will do too. Or make it veggie with zucchini, broccoli, basil and onions.

This is the first time I have served kids and they insisted on having it on the website. The name they got was “Open Fridge Breakfast Bake” because that’s basically what I did – I opened the fridge, put everything I could find in the dish and baked.
