Easy Carrot Cake Recipe – This is my favorite recipe for homemade carrot cake! This cake is easy to make, moist, and covered with a light cake cream cheese frosting.

I feel like a cake is a dessert that most people tend to make around Easter. But honestly, carrot cake is an amazing dessert and I think it should be enjoyed all year round. Especially when it comes to this recipe.

I know it might be a bold statement to call a recipe the best, but I mean it. Not only is the cake easy to make, but it’s so moist and full of flavor that it’s impossible to stop at one slice.

Once you see how easy it is to make carrot cake from scratch, you’ll want to make it more often.

To make this carrot cake, you start by mixing your dry ingredients. Another important thing when measuring your dry ingredients is to make sure to measure and measure your flour.

You want to avoid carrying flour in the measuring cup, otherwise, you will end up with too much in your line. Or if you have a food scale, you can also weigh your ingredients to get the exact measurements.

I also really like some spice in my carrot cake so I use ground cinnamon, ginger, and nutmeg. All three flavors add such flavor to this cake, but it’s not overpowering. They really take this cake from good to amazing, trust me.

For wet ingredients, you will be using more oil, eggs, vanilla, brown sugar, granulated sugar, and applesauce. The amount of oil and apples in this recipe adds just the right amount of moisture, so you end up with a moist cake without oil.

As always, I use more brown sugar than granulated sugar because it adds more moisture and flavor to this carrot cake. And of course, you’ll be mixing in some chopped carrots. I don’t like to skimp on the carrots when it comes to this recipe, so I use 3 cups of chopped carrots.

I know some carrot cake recipes that call for raisins or nuts, but I choose to leave them out because I know not everyone likes them. However, if you like some (or both!) feel free to mix more in the batter.

Applesauce: You can replace the applesauce with 1/2 cup (120 grams) of dark cream or plain Greek yogurt.

Sometimes you just need cake cake cake, no doubt. It’s easy, throw together one smooth cake. Why is a one-layer cake the same as a dessert cake?! Which means I eat this simple, light carrot cake all the time. This is perfect for an Easter spread!

The flavor of the carrot cake is a warm fragrant, moist and dense cake filled with a delicious combination. I’m not a fan of coconut or raisins so I don’t use them in my recipe but you can add them if you want. I love pineapple so I add crushed pineapple and add toasted peanuts. My favorites are toasted walnuts or pecans.

For the cream cheese frosting, you need cream cheese and butter both softened to room temperature. Then you will need confectioner’s sugar, make sure to sift it to make a lump-free frosting. Then I like to add buttermilk powder which gives a great tangy flavor that pairs well with the cream. And with more frosting, I like to add some heavy whipping cream to make the frosting nice and creamy and a little vanilla extract.

Easy Moist Classic Layered Carrot Cake With Cream Cheese Frosting

In a medium bowl mix together the flour, baking soda, baking powder, salt, and spices and set aside.

Add the shredded carrot and crushed pineapple to the wet ingredients and whisk to combine. Then fold in the lightly toasted raisins and toasted nuts and raisins and coconut if using. Do not over mix the cake batter.

I grate my carrots on a box grater with fine tuning, but you can use a larger side if you want. You can also use a food processor to make your own carrots. Just make sure you use freshly grated carrots, store-bought grated carrots that have lost most of their moisture.

Pour the cake batter into the prepared pan and bake for 25-30 minutes. As always check with a toothpick for any wet batter or gently press the center of the cake to see if it springs back. Let cool completely before frosting the cake.

In a large bowl cream together the soft cream cheese and butter with an electric mixer or in the bowl of a stand mixer.

Add in the confectioner’s sugar, buttermilk powder, vanilla bean paste, and heavy cream. Mix on low until all the powdered sugar is incorporated and mix on high for 2-3 minutes.

This cake has a great frosting to cake ratio, but the frosting is very smooth and runny and not overly sweet. That’s enough!!
