Dutch Oven Breakfast Recipe – Last week we spent three great days atop Loft Mountain in Virginia’s Shenandoah National Park. The weather was perfect and we finally got a chance to try out our new pop-up camper we bought last October. It was great! We grilled steaks, corn on the cob, and this delicious, hearty, filling breakfast casserole in the lodge’s Dutch oven.
This Dutch oven was designed for use on a charcoal fire. The instruction manual explains in great detail how much charcoal goes on top, how much on the bottom, etc. You can make pizza, cake, cobbler and this delicious breakfast with just a few easy steps.
Dutch Oven Breakfast Recipe
Brown the sausage or bacon first and remove on a plate lined with paper towels. Leave the remaining drippings in the dutch oven and cook the onion until soft.
One Pot Breakfast Recipes
Add the diced potatoes, or if you want to be like me, add two bowls of plain potatoes with the onion and saute until the potatoes are brown on the edges.
Add the cooked sausage on top of the potatoes, and a dozen scrambled eggs. Add a little salt and pepper and shredded cheddar cheese.
Then anchor it and add 16 or more hot charcoals. You can move the charcoal around after about 15 minutes to encourage even cooking. Bake the casserole for 25 minutes and serve.
While the casserole is cooking grab a nice cup of coffee and your camera and relax while breakfast cooks over the fire.
French Breakfast Bread
Our son Patrick and his fiance Callie (and my big dog Peyton) came with us on this trip! We were very happy that they came. They are so much fun!
They were excited to play with their new tent because that’s where they’ll be spending their honeymoon this October while backpacking and camping in the Acadia Mountains of Maine. They include a rain fly that also provides a covered, protected area at the front for storing bags, shoes, and other gear.
Peyton was much better behaved than my two-headed Jack Russell which might explain why we don’t have pictures of them!
Anyway – after 25 minutes breakfast was ready. It was very filling and satisfying in a good way. We even heated some up for breakfast the next day and it was still great. It is a keeper and will be important on our travels.
Best Camping Breakfast Ideas
The ground around our camp was covered with fiddle ferns. Rabbits were running in and out of the enclosure which bothered the dogs 🙂
Did you know that there is one black bear for every square mile of Shenandoah Park? Food cannot be stored in your tent or camper and must be sealed in bear-proof metal boxes, hung from trees in the air or locked in the vehicle. We didn’t see any bears on this trip but saw lots of deer and rabbits, birds and other wildlife. It was very pleasant. Blackberries are everywhere but not yet ripe at the top of this icy mountain.
After a big breakfast we hit it off hiking on the Appalachian Trail. The engaged couple prepares the man all his gear for his honeymoon trip 🙂 It was a nice shakedown trip.
4 more months and I have a wonderful, beautiful new daughter! Can’t wait to go camping with them all again.
