Today’s Asian-style cucumber salad was inspired by Din Tai Fung. What makes this dish so good is a great honey garlic vinaigrette that you can make spicy or not spicy to go with the juicy, crisp cucumber.

A Taste Of Taiwan: Din Tai Fung Is Delicate, Colorful And Intense

I recommend using Persian cucumbers, Japanese cucumbers or mini cucumbers. Persian cucumbers are small, have thin skin and are almost seedless. They are super crunchy, snappy, slightly sweet and less watery. Because the skin is thin you do not need to peel it.

If you can’t find Asian cucumbers, the next best substitute is English cucumbers. English cucumber also has thin skin so you don’t need to peel it but it tastes less sweet and a little more watery, so make sure you block the water well with a paper towel, according to the instructions below.

In order to be authentic, Din Tai Fung copycat recipes must be bold, flavorful, slightly spicy, and out-of-this-world delicious. The Taiwanese restaurant is best known for its unique wontons, noodle dishes and overall creativity in every dish.

Place the sliced ​​cucumbers in a small bowl and sprinkle kosher salt over the top. Toss to combine, and let them sit for 30 minutes. Rinse the salted cucumbers afterwards.

Next, make the cucumber salad dressing by whisking rice vinegar, mirin, sugar, sesame oil, garlic and salt together in a bowl.

Toss the cucumbers in the sauce. They need to marinate (covered) in the fridge for at least 4 hours or even up to 2 days to achieve the authentic flavor.

This gives you plenty of time to prepare a flavorful main dish, like Chinese roasted chicken, for dinner.

You can also save time by assembling the cucumbers on the plate about an hour before serving. Drizzle the oil and add the peppers over the top right before it’s time to eat.

Chili Oil – Thin Tai Fung uses a specialty, in-house chili oil. A close duplicate I found is this La Yu chili oil brand. You can find this at your local Asian grocery store. If you can’t find that particular brand, I’ve seen other Asian chili oil brands that are fine to use.
