I seem to still get this question a lot and a mug cake is exactly what it sounds like. Cake in a cup! It’s great because you don’t have to whip up a bunch of tools to make this easy chocolate mug cake.

But seriously, you’re probably so over cupcake recipes and you’re probably rolling your eyes at me right now but stop! I promise you this is unlike any other mug cake out there. I tried a bunch of mug cakes and hated them.

I thought they were a really neat concept for a quick dessert fix, but nothing will ever beat baking a whole cake or cupcake. I hated that all the cupcakes came out spongy and had the roughest texture.

Last week, I craved chocolate like no other. It was quite a difficult situation. We didn’t have desserts in the house because I didn’t bake and I didn’t want to run out to get anything so I thought I’d try a mug cake.

It ended up being recipe development time because the first batch turned out terrible. Like, I threw it in the trash and it was just one lumpy sponge thing.

The second one was a little better but still really bad. The third, I changed some ingredients and added a little more of them and it turned out the way I wanted but I knew it could have been better so on the fourth try, I finally got it to work and the exact texture I wanted.

Add the liquids. Next, add the liquids to the bowl and whisk until a batter-like consistency is formed and no lumps of dry ingredient remain.

It’s time for extras! If you’re using chocolate hazelnut spread, go ahead and add it directly to the center! Same goes for other toppings. You don’t need to push it down, the batter will cook around it and sink it down.

Okay, I get asked this a lot too and the reason why this cupcake is made without eggs is because that’s what makes it have a spongy texture!

If you think about it, it makes sense. Why would you put a whole egg in a mug cake when a regular full size cake often calls for one or two eggs? This is not a full size cake. And of course I’m not going to ask you to split an egg in half. Just leave it out! Best texture, ever!

You can, but I tested it with self-raising flour and it just came out spongy and not the texture I wanted.

I like my cakes light, fluffy and moist and with the self-rising flour, it just didn’t produce the results I wanted.

There have been many people who have used self raising flour in this recipe and not noticed a difference so if you are up for the challenge I say go for it.

*When this recipe was developed, we were in a different house. This microwave in this house took me 70 seconds to cook the cupcake. When the video was taken we were in a new house. In our current microwave, it takes 90 seconds…which is why there are two different times. The fact remains: all microwaves are different and can yield different cooking times, which turns out to be true with my two different microwaves in two different homes.

No eggs? Right. There are no eggs in this recipe. Why? Egg is what turns the cupcake into a sponge. If you think about it, when you bake a full size cake, you usually use 1 or 2 eggs… for a mug cake using one egg is a lot!

This is the best mug cake in the world I have never tried a better mug cake and I have tried a lot of mug cakes but this one is at the top of my list!!!

I just made this, and found that while making it the batter looked watery, more like pancakes than cake, so I added 2 more tablespoons of flour which seemed to do the trick. This is the nice looking cake although it tastes ok, it tastes more like a pancake and has a bit of a pancake texture too. Overall it’s a good snack if you have nothing else
