It took years of testing to come up with the perfect chocolate cake recipe. This recipe has been made by thousands of people around the world who all agree: it is the most amazing chocolate cake. This cake is moist and perfectly crumbly. It’s super easy to make, using only one bowl for batter, and puts doctored cake mix recipes to shame. They also call it “The Matilda Cake” because it looks like the decadent cake eaten by Bruce Bogtrotter in the movie Matilda.

Yes you can, for both you need to divide the recipe into 2/3. I know there are 4 eggs in this recipe so this is the hard part. Use only 3 eggs.

Hershey’s Unsweetened Cocoa Powder was used in this cake to use the most widely available brand for my readers. You can also use high-quality cocoa powders such as Ghiradelli or cocoa powders from specialty chocolatier shops, but these can be expensive. We recommend staying away from cheap store brands as their quality does not deliver the best results.

What an easy chocolate cake! No mixer required for the batter, just whisk the dry ingredients in one bowl and the wet ingredients in another. Pour the wet ingredients into the dry ingredients (or vice versa, it doesn’t matter), add the hot coffee, then mix everything together. The cake batter is thin. Divide between 2 9-inch cake pans. You can easily stretch it into 3 or 4 8-inch or 9-inch cakes if needed. Or make a quarter sheet cake using a 9×13 inch cake pan. See my recipe notes for details.

You can follow the recipe as written using spices and hot coffee/water. Or you can add sour cream. Whichever way you make it, the process is the same. (Just reduce the liquid and add sour cream!)
