A cobbler is a fruit dish that is covered with a pastry, biscuit or scone before being baked. In this case, we use a dough that forms a golden, buttery, soft, cake-like coating that floats on top of the cooked fruit. I’ve heard some ugly rumors about people calling fruit covered in cobbler’s pie crust – let’s skip that idea because this is my blog and I have the last word.
If you want to use a pie crust, just call it a pie as-is and move on (although I recognize that MANY southern cobbler recipes have a top and bottom pie crust).
After years of doing this, I discovered a little secret that I’m going to let you in on: buttermilk.
The magic happens with the buttermilk. It makes the dough softer and spicier and I really prefer the plain milk version. If you don’t have buttermilk, it’s okay to use all 2% or whole or make a filler buttermilk with a recipe like this one. It’s not the same flavor, but it works in a pinch.
Easy Blackberry Bread Recipe With Fresh Blackberries
This recipe also calls for self-rising flour. It is a mixture of flour, yeast and salt together in a bag. If you don’t have self-rising flour, you can make your own.

This is also a great base for any other fruit cobbler. If you’re using sweet peaches as the fruit, feel free to reduce the amount of sugar by 1/4 cup or more, depending on the sweetness. I also love this recipe with pitted cherries. So good!
This recipe is what we call “self-sauce” because you put the butter, then the dough, then the berries and the water they cooked in, then everything bakes, the cake comes up, the berries sink and the flour in the bottom. dough thickens berry water into a sauce. It’s magic.

If you want the sauce to be thinner: add more or all of the water you used to cook the fruit.
If you want the sauce to be thicker and the whole cobbler more cake-like: add less fruit cooking water (leave 1/3 or so behind).
Serve your cobbler hot or at room temperature, but when you’re done yes, go ahead and refrigerate. I cover mine in plastic wrap. Blackberry pie lasts 3 or 4 days in the fridge.
This traditional southern blackberry cobbler uses (about) a cup of each ingredient and is the easiest, tastiest cobbler you’ll have this summer.
Blackberry Pie Recipe From Scratch
Remember: the more water you add to the dough and fruits, the more juice your cobbler will have when baking. I recommend 2 cups of water here for a moderately juicy cobbler. If you want it thinner, add the 3 full glasses of water. If you want it more like a cake, make 1 1/2 or even 1 3/4 cups of water.

Best Blackberry Crumble Bars
Almost everyone is familiar with those delicious pumpkin pie bars that appear in the fall. So, in the warm weather months, we typically see lemon and coconut bars and coconut cream pie bars. Those are fantastic, but these little blackberry treats really capture the sweet essence of summer!
Delicious blackberry bars. You might say, “Hello, perfect summer dessert.” I really love summer fruits, but blackberries are one of my all-time favorite fruits!

The tops of the blackberry pie bars will not turn a dark brown, but this is not indicative of doneness. I’ve included a photo of the top of the bars on the baking sheet so you can get an idea of the slight browning/browning that occurs.

Be sure to let your cookie bars set for at least an hour before cutting them, as this will give you a cleaner cut. I like to eat it cold, so I leave it in the fridge for a few hours before serving.
Recipe can be doubled and made in a 9X13 inch pan. Your yield will obviously depend on how long you cut the bars. I like to cut them into 16 pieces.
When making the shortbread crust, keep the butter very cold. This will give it the proper consistency as it cooks in the oven.
You can also use frozen blackberries if you don’t have access to fresh ones. Just be sure to defrost and drain them well beforehand or you’ll get unwanted moisture in your stuffing.

You’ll want to keep these tasty little babies in the fridge wrapped in plastic wrap. If you’re preparing them for an event the next day, it’s best to leave them behind because they’ll be gone!!
I’ve never frozen these blackberry pie bars, but I don’t see why you couldn’t. Keep in mind that the crumble on top will probably not be crispy after thawing. I would also double wrap them before placing them in a freezer bag and slowly thaw them in the fridge overnight.
Let the crust cool completely before adding the filling to these bars. That said, you can make the crust a day ahead, or make the entire batch the day before serving. I think they’re best cold, but that’s completely optional.
These delicious bars will stay fresh and tasty for up to 3 days in the fridge. The problem is, you’ll probably have to hide them or they’ll likely disappear.

Serving up a batch of these fruit-laden treats doesn’t require a lot of special gadgets. In addition to an 8×8 baking pan and all the usual measuring utensils, it helps to have a food processor to mix the shortbread crust.
