However, I still enjoy baking a nice treat like this Blackberry Breakfast Cake for the occasional weekend visitor!

You might think that because the batter is too thick, the cake will become dense and heavy. But that’s not all! The texture is light and moist but not fluffy. The batter is so fine and thick that the blackberries don’t sink to the bottom during baking.

Fresh or frozen blackberries work well in this breakfast cake. There is no need to thaw the frozen blackberries before adding them to the mixture. Layer the frozen berries in the batter as you would fresh.

This year we have harvested a lot of blackberries locally. This variety of thornless blackberry plants produces nice big berries with amazing flavor. We’ve enjoyed these blackberries in a variety of recipes like our Old Fashioned Blackberry Cobbler,  Blackberry Pie, and this unique, tangy and delicious Blackberry Ice Cream.

If desired, substitute full-fat plain Greek yogurt for the sour cream. Also, use salted butter if you have it on hand. Reduce the amount of added salt by half.

For coarse sugar, I use organic sugar in raw cane sugar. Any turbinado or decorative sugar will work well in this cake. If you only have granulated sugar on hand, use it! Everything is good.

Blackberry Swirl Coffee Cake

A lover of fruits and vegetables. I love making the products fun and delicious, not to mention taking tons of pictures in the process! 🙂 These are the result of a kitchen accident. A while back I started working on a recipe for a crumble or cobbler topping. By now, you know me and baking. It took a few tries for me to excel at that end. Baking + healthy don’t always make the best pair. I have to play with textures as I go and the proportions need to be tweaked and changed. It’s not like adding it or adding them to taste…it’s science. And folks, I’m no scientist.

So the crumble topping attempt failed. Miserably. The setting was wrong. The size was very wrong. A hot mess, so to speak. Indeed. But it tasted good. It reminded me of the flavor of this berry oat bread…and the texture wasn’t too far off either. I immediately started thinking about what to do with it. I tried using it as a muffin and adding a fruit filling. failure It tasted good, but it was wrong. Then this menu popped into my head. My kids are NUTS for the fruit-filled bars you can buy at Trader Joe’s. They’re so incredibly unhealthy, but I sometimes end up buying them because they’re a treat..and a quick breakfast on the way out the door isn’t necessarily my cup of tea…I don’t connect well with textures like jam. But to each his own.

Long story short, or wait, I think I already gave you the long version. TMI? Excuse me. I made the bars from an attempted crumble recipe. The texture totally reminded me of the bars my kids love…I’d say it’s a cross between a loaf of bread and a granola bar. Size, spot on. I then used some of the crumb mixture for the thick base, added a blackberry fruit layer, and used the rest of the mixture as a topping.

My kids absolutely love them… they really are a homemade version of their favorite treat. Now I will stop buying that store bought version. My husband teases me about how I can’t allow kitchen failures. I’m constantly trying to figure out how to fix them and change them and make them work. So, dear, there you have it. Blackberry Croissant French Toast Bake

Place all ingredients in a small saucepan and mix well. Simmer over medium heat for 5-7 minutes or until the mixture thickens and the berries break down to your desired consistency. Keep aside.

Whisk together eggs, coconut oil or butter, maple syrup, and honey in a large bowl. Place the oats in the food processor and pulse approximately 20 times or until the oats are lightly ground, with both a slightly floury texture and a few large oat chunks. Add the oats, almond meal, baking soda and salt to the egg mixture and stir until all ingredients are combined.

Pour 3/4 of the oat mixture into the prepared baking dish, spread evenly on the bottom, and press lightly with your hands. Pour the blackberry filling over the oat layer and place the remaining oat mixture on top of the berry filling. Bake for 30-35 minutes or until crust is golden brown. Remove and cool completely before cutting into bars.
