Cherry. They are one of my favorite summer seasonal fruits. So, I set out to recreate the decades-old Black Forest Cake in my own way.
It looks fancier than it is, and chocolate bark was actually easy to make. The hardest part of this cake is making sure your cherries don’t have any long cherry pits, which are caused by less-than-starry cherry pitters that break after about 10 cherries.

So, a super easy chocolate cake, a simple whipped cream for the frosting, and fresh cherries. That’s really all you need.
To keep it traditional, I also made cherry syrup (using kirsch – cherry liqueur) to brush over the cake layers.
The chocolate bark on the side of the cake looks pretty easy to make. I first saw this in my friend Janet’s Irish Chocolate Cake. She has a video tutorial to show how to make it, and I basically followed her steps: melt chocolate, spread on parchment, chill, unroll.
The only difference is that I popped it in the freezer for 20 minutes instead of the fridge for 30 minutes because I’m super impatient.

I didn’t really think it would work, to be honest, since it was my first time trying this and all, but it worked great!
Had to re-thaw it and try again, but they looked perfect after I put them on the cake.
You’ll have to work quickly with this chocolate bark—because the chocolate isn’t tempered, it will melt on contact.
I recommend using food safe latex gloves so you don’t touch the chocolate directly. This will help a ton. I popped chocolate chunks into the fridge/freezer to chill here and there — it was also a hot day, so that didn’t help my predicament.

At one point I actually had the cake and crust in the fridge and was putting shards in the cake with the fridge door open (lol).
I used a vegetable peeler on a block of chocolate and created chocolate shavings on top, and then used a 1M tip to pipe rosettes from the whipped cream on top.
Really, though, you can skip all the bells and whistles and do a rustic frosting job with just whipped cream.

Vegan Black Forest Cake
The Black Forest Cake is based on the German dessert “Schwarzwälder Kirschtorte”, which translates to “Black Forest Cherry-torte”. Although some may have named the Black Forest Cake after the country’s mountain range, this is actually a myth. It is named after the kirsch made from black forest cherries. If the cake doesn’t have kirsch, it can’t be called Black Forest.
For this recipe, I prefer to use frozen or fresh cherries. I would stay away from canned cherries.
I call for sweet cherries in the ingredients list because they’re easier to find, but sour cherries are more traditional. If you use the sour variety, I recommend increasing the sugar slightly to help compensate for the different levels of sweetness. Or you can do a combo if you really want to – it’s up to you!
I’m not usually a big fan of canned or jarred fruit – outside of quality maraschino cherries like Luxardo, which are great for decorating this cake if using frozen cherries for the filling and if fresh cherries are out of season.
No Bake Vegan Black Forest Cake (gluten Free)
However, I have seen other versions of this cake made with canned or jarred cherries. Go ahead and use them if you’re in a pinch, but this recipe hasn’t been tested for that swap. You may need to reduce the sugar to compensate for the added sweetness in canned and jarred fruit.
You want your ingredients and equipment to be as cold as possible to make creaming easier. Avoid letting heavy cream sit on your counter while you prepare things. Put your bowls in and place them in the freezer – both preferably metal – for 30 minutes or more to get nice and cold.
If you want to make and layer this cake a day ahead of time, the whipped cream may cry. A good way to make sure your whipped cream lasts longer is to freeze it. There are a few different ways to do this, but one of the best is gelatin.
To stabilize whipped cream using gelatin, “bloom” unflavored gelatin in a little water. Heat it in the microwave until it melts. Then pour the melted gelatin into the cream and it will remain firm and airy.
